- Olive oil spray
- ½ cup sugar
- 1 tsp cinnamon
- ½ tsp ground ginger
- ¼ tsp ground cloves
- 200g pumpkin
- 3 eggs
- 2 x Rafferty’s Garden Pumpkin, Apple & Sweetcorn
- 1 x 385mL can evaporated milk
Storage tip: Store in the fridge and eat within 48 hours
Step by Step Instructions
Preheat your oven to 180°C. Lightly spray a pie dish.
Mix sugar, cinnamon, ginger and cloves in a small bowl.
Steam or microwave pumpkin until soft and mash well.
Using an electric beater, beat eggs in a large mixing bowl and add Rafferty’s Garden Pumpkin, Apple & Sweetcorn pouches and pumpkin, then beat until well combined. Add spice mixture and stir through.
Slowly add evaporated milk while beating mixture on a low speed.
Pour into pie dish and cook for 40 minutes.
Cool for about 15 minutes and then refrigerate for three hours before serving.
