A quick and easy wholesome muffin that the whole family will love.

Ingredients

  • 3 x Rafferty’s Garden Natural Yoghurt 6+ months 70g
  • 1 cup whole meal self-raising flour
  • 1 cup shredded coconut
  • ½ cup LSA
  • ½ cup brown sugar
  • ¼ cup chia seeds
  • 1 tsp baking powder
  • ¼ cup coconut oil, melted
  • 1 egg
  • 1 tsp vanilla extract
  • 1.5 cups frozen raspberries

Storage tip: Store in an airtight container for 2 days.

Step by Step Instructions

Step 1

Preheat the oven to 180°C. Place muffin cases into a 12-hole muffin tray and spray lightly with cooking spray.

Step 2

Combine all the dry ingredients into a large bowl.

Step 3

Add all the other ingredients and stir until just combined. Add the berries in and mix gently, be careful not to overmix.

Step 3

Divide the mixture into the muffin cases and bake for 30 minutes or until firm to the touch.
