Coconut, Chia and Raspberry Muffins

A quick and easy wholesome muffin that the whole family will love.
  • Ingredients

    Makes - 12 Muffins

    3 pouches ofRafferty’s Garden NAS Plain Yoghurt

    1 cup whole meal self-raising flour

    1 cup shredded coconut

    ½ cup LSA

    ½ cup brown sugar

    ¼ cup chia seeds

    1 tsp baking powder

    ¼ cup coconut oil, melted

    1 egg

    1 tsp vanilla extract

    1.5 cups frozen raspberries

    Age:

    Suitable for babies aged 10+ months.

    Storage Tip:

    Store in an airtight container for 2 days.

    Variation Tip:

    Try the Rafferty’s Garden NAS Strawberry Yoghurt and replace the frozen raspberries with frozen or fresh strawberries.

    Add ground cinnamon to the mixture.

    Sprinkle some pepita or sunflower seeds on top for older babies to add a texture variation.

  • Method
    Step 1
    Preheat the oven to 180°C. Place muffin cases into a 12-hole muffin tray and spray lightly with cooking spray
    Step 2
    Combine all the dry ingredients into a large bowl.
    Step 3
    Add all the other ingredients and stir until just combined. Add the berries in and mix gently, be careful not to overmix.
    Step 4
    Divide the mixture into the muffin cases and bake for 30 minutes or until firm to the touch.
