Coconut, Chia and Raspberry Muffins
Makes - 12 Muffins
3 pouches ofRafferty’s Garden NAS Plain Yoghurt
1 cup whole meal self-raising flour
1 cup shredded coconut
½ cup LSA
½ cup brown sugar
¼ cup chia seeds
1 tsp baking powder
¼ cup coconut oil, melted
1 tsp vanilla extract
1.5 cups frozen raspberries
Suitable for babies aged 10+ months.
Store in an airtight container for 2 days.
Try the Rafferty’s Garden NAS Strawberry Yoghurt and replace the frozen raspberries with frozen or fresh strawberries.
Add ground cinnamon to the mixture.
Sprinkle some pepita or sunflower seeds on top for older babies to add a texture variation.
- Step 1
- Preheat the oven to 180°C. Place muffin cases into a 12-hole muffin tray and spray lightly with cooking spray
- Step 2
- Combine all the dry ingredients into a large bowl.
- Step 3
- Add all the other ingredients and stir until just combined. Add the berries in and mix gently, be careful not to overmix.
- Step 4
- Divide the mixture into the muffin cases and bake for 30 minutes or until firm to the touch.
